Recipe: Polpette al Sugo (Meatballs in Tomato Sauce)

Ingredients:

• 500g mince (beef & pork mix)
• 1 shallot, finely chopped
• 40g Parmesan, finely grated
• 30g breadcrumbs
• 1 egg, lightly beaten
• ½ tsp dried oregano
• ½ tsp fennel seeds
• Salt & pepper to taste
• 1-2 tbsp Napolina Olive Oil
• 1 clove garlic, crushed
• 500g Napolina Passata
• Pinch of chilli flakes
• Handful of torn basil leaves
• 400g Napolina Tagliatelle
• Extra basil and Parmesan for garnish

Method:

1. Mix the mince, shallot, Parmesan, breadcrumbs, egg, oregano, fennel seeds, salt, and pepper. Roll into 20–24 small meatballs. Chill for 15 minutes.
2. Heat olive oil in a frying pan and brown the meatballs evenly. Set aside.
3. Add garlic to the pan and fry until golden. Pour in the passata, chilli flakes, and seasoning. Simmer gently.
4. Return the meatballs to the sauce, cover, and cook for 15 minutes. Add basil leaves.
5. Boil the tagliatelle until al dente, drain, and mix with the sauce. Garnish with Parmesan and basil.
